Breakfast Bread

Hello, friends. It’s been a couple weeks since I have posted anything, so I’m here today to write about a delicious invention. I love to make bread, and I wanted to do something different for our church’s Easter Breakfast. So I looked online and took a few ideas here and there from different recipes, and came up with something I call ‘Breakfast Bread’.

After the 2nd rise, my bread is ready to go into the oven. I do 400°F for 30 min.

After allowing the bread to cool ( I baked it at night, and set it in the oven until morning), I proceeded to hollow out the bread loaves. For this, I just used a steak knife, and cut out a large V-shaped section from the middle of the loaf. I made sure not to cut to close to the bottom of the loaf to created a hole. We want to keep the deliciousness in the bread! Next, I cleared out some more of the inside with my hands, kind of like scooping out the inside of a pumpkin, but not too hollow. We want some bread to stay with our meal.

By the way, this whole process filled my kitchen with awesome smells! Although it was no stress free endevour. It was Easter morning, and between getting 4 kids ready for church (which my husband did alot of that) and cooking, I was ready to go back to bed!

Next came the filling. I sauted in a skillet the olive oil, green onions, jalepenos, bacon, garlic, basil, salt and pepper. When the bacon was fully cooked, I added the whole dozen whisked eggs to the pan. When they were just short of being fully cooked, I added the cream cheese, sour cream, and cheese. After the cheeses were melted and incorporated, the filling was finally ready.

I scooped the filling into the loaves of bread, and just sprinkled a little more cheese on the top. And the rest is history! I got a couple of compliments from people at church, and it’s definitely something I want to make again. It could even be changed into pretty much anything you want; a pizza loaf, a ham and cheese loaf… think of the possibilities!

Breakfast Bread

 

Ingredients

  • 2 loaves of bread (sourdough, french, whatever!)
  • 1/4 c chopped jalepenos (I use canned)
  • 1 pound chopped bacon
  • 1/2 c chopped green onion
  • 1 dozen eggs
  • 4 oz cream cheese
  • 4 oz sour cream
  • 1/3 c shredded colby cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp basil
  • salt and pepper, to taste
  • 1 T olive oil

Directions

Hollow out the loaves of bread. Saute in a large skillet the olive oil, green onions, jalapenos, bacon, garlic, basil, salt and pepper. When the bacon is fully cooked, add the whole dozen whisked eggs to the pan. When they are just short of being fully cooked, add the cream cheese, sour cream, and cheese. After the cheeses are melted and incorporated, the filling is ready. Scoop into bread loaves, and sprinkle cheese on top, if preferred.
